I love coffee… Maybe a little too much. I get through several cups of the stuff every morning, so its no surprise coffee cake is one of my favourites. Fortunately I’m not alone, its a regular request to bring into the office for birthdays.
Pretty much everyone likes a Victoria sponge cake. Not only is it usually considered pretty easy to make, but you, and most other people, know exactly how it should taste. That means you have nowhere to hide and it’s even more important to get the recipe right if you’re making a gluten free version.
This gluten free loaf cake is perfect if your just finding your feet as a gluten free baker. Its great tasting and easy to make, the whole thing is done within an hour. Chocolate and coconut is a flavour combination thats been tried and tested and the coconut does an amazing job of keeping your sponge from drying out.
Bundt cakes are your best friend as a gluten free baker. The shape of the tin means your cake cooks from the inside and outside at the same time, meaning your more likely to avoid a stogy centre. They’re also great if your short on time (or if you’re feeling lazy, like I often am) as they cook quick and look great straight out of the tin.
